Wild Gin
A contemporary Australian dry gin inspired by the wild landscapes of our island. Distilled with hand-harvested and locally grown ingredients: boobialla, eau-du-cologne mint, lime zest and pink peppercorns. This gin has sweet spice and citrus notes.
Boobialla, also known as native juniper, grows wild in the shores of Kangaroo Island and adds a piney sweetness to gin. Pink peppercorn trees grow on the Island. While Pink peppercorn isn’t related to black pepper, it looks and tastes a lot like it. Its flavours are much milder and more complex, by bringing together ingredients such as wild boobialla and pink peppercorn, the stage is set for the wildest gin imaginable.

Pear Sour
Ingredients
50mL Wild Gin
30mL Spiced Pear Syrup
20mL Lemon Juice
30mL Egg White or Aquafaba
Garnish with dehydrated pear.
Spiced Pear Syrup:
1.5 cups water
1.5 cups pear chopped
¾ cup raw sugar
3 Cinnamon Quills
3 Star Anise
5 Cloves
Method
Add Wild Gin, pear syrup and lemon juice to a shaker with ice. Shake for 20 seconds or until chilled, discard ice and add egg white or aquafaba and shake again until combined. Strain into a coupe glass and garnish.
