Casks from Jack Daniels, Heaven Hill, and Buffalo Trace provide a subtle and fruity character that complements our spirit nicely. It shows in this whisky, which is our lightest and most subtle of the three. Sweet spice and tropical fruits on the nose, creamy vanilla on the palate, with fruit and spice in the background. The finish is long, clean, and fades gently.

BOURBON CASK OLD FASHIONED
Our bourbon cask whisky is smooth, rich, and full of flavour. In this Old Fashioned, we keep things simple: a touch of sweetness, a couple of dashes of bitters, and time to stir it all together. It’s a classic that never needs dressing up – just good whisky, done well.
Ingredients
- 60ml Kangaroo Island Spirits Bourbon Cask Single Malt
- 5ml Kangaroo Island Honey syrup (or simple syrup)
- 2 dashes Angostura bitters
- Dash orange bitters
- Orange peel & native thyme sprig (for garnish)
Method
- Add whisky, honey syrup, and bitters to a mixing glass with ice.
- Stir gently until well chilled and diluted.
- Strain over a large ice cube in a rocks glass.
- Express orange peel over the glass, garnish with peel & native thyme.
